This olive oil comes exclusively from the east of the Taygetus mountain. Its climate and local varieties, such as Koroneiki and Athinolia, guarantee the best combination for an exceptional flavor.
The cultivation of olive trees is rooted in the popular tradition of the Peloponnese and the trees are often centuries old. They are treated today according to the rules of organic farming. The olives are still mostly hand picked and driven directly to the mills to be pressed.
The pressing temperature does not exceed 30 ° C so that the vitamins and essential oils which give the oil its characteristic flavor and aroma are not destroyed. The very low average acidity of the oil allows us to classify it as "extra virgin".
